Banana Bread

  • My take on banana bread

    This almond flour banana bread is my fave. It’s light, sweet and satisfies my sweet tooth. I’m not gluten free, but I usually prefer baking with almond flour because I like the taste/texture.

    Ingredients:

    • 1 cup almond flour
    • 1/2 cup oat flour (store bought or made in a food processor works too)
    • 1 tsp baking soda
    • 2 ripe bananas mashed
    • 2 eggs
    • 1/3 cup maple syrup
    • 2 tbsp coconut sugar (brown sugar works too)
    • splash of vanilla
    • pinch of sea salt
    • cinnamon – measure with your heart

    Mix together the dry ingredients, add in the mashed bananas, then mix in the remaining wet ingredients. Spread the dough into a pan (8×8 preferred but honestly I just use whatever I can find and make it work.. this is why im not a baker)

    Bake at 350 for 45 mins (or until a toothpick comes out clean)

    Optional: Mix in chocolate chips, layer a banana on the bottom, sprinkle some extra oats on top for a crunch or even make a little glaze from equal parts powdered sugar and water to drizzle on top!

    There’s lots of ways to get creative with this, so do whatever additions you prefer. My personal fave is to mix in chocolate chips and add a few on top, but i also love the way the banana caramelizes at the bottom of the pan if you opt for that.
